Full tutorial video above. Watermelon juice with mint and lime is refreshingly delicious and makes a perfect summer drink. With a dash of maple syrup and touch of salt this is so cool and hydrating.
Have all the ingredients super chilled prior to making the recipe.
Add the chilled watermelon chunks, maple syrup, lime juice and salt into a blender and run it at a high speed for a few minutes until smoothly blended.
Adjust the maple syrup as per the sweetness of watermelon. And accordingly adjust the lime juice and salt if needed.
Then add whole mint leaves for a milder flavor, or thinly sliced mint for a robust flavor.
Next, add lime slices and mint leaves into glasses, then some ice cubes. Pour mineral water, about ⅓ to ½ the way in the glasses (remember that includes the ice). Fill it up with the blended watermelon juice.
Decorate with lime slices and watermelon balls on rim of the glass. And garnish with small mint leaves. Serve chilled.

Notes
You can skip maple syrup if the watermelon is very sweet and use less mineral water.
It is natural for the juice to separate. Just stir it.
Make Ahead: You can blend the juice and chill it. Combine with mineral water just before serving.
Storage: Blended juice stays good in the refrigerator for 3 to 4 days. If mineral water has already been added, then use it in a day or two.
VARIATIONS
With Ginger: Use some fresh ginger instead of mint to flavor the drink. You will need to blend only a small piece of ginger into the juice or add as slices for a milder flavor.
Popsicles: You can make popsicles using the first five ingredients, including mint. Just blend it all together and pour it into popsicle mold and freeze for 6 hours.
