Try these four peach smoothies for a refreshing and satisfying way to cool off this summer. Choose from a variety of traditional and unique flavors to suit any taste. Peaches are perfect for a nourishing and delicious beverage!
In a high speed blender, take the peach slices, yogurt, milk, lemon juice, honey, salt and any flavors (if using). Blend it at high speed until smooth and creamy. Adjust sweetness with honey and consistency with milk or yogurt. Pour in tall chilled glasses, with ice. Decorate with mint leaves and insert a peach slice on rim of the glass.
Variation: Make plain yogurt smoothie with honey and add a few layers of that with the peach lassi like we do with the peach raspberry smoothie below.
Peach Raspberry Smoothie
In a food processor, take the raspberries and 1 tablespoon honey. Process it until very smooth, transfer to a small bowl and rinse the processor bowl.
Then process peach slices, milk, salt and 1 tablespoon honey until very smooth. Layer the beverage in the following order: pour half the peach smoothie in a chilled glass, half raspberry puree, remaining half of peach smoothie and raspberry puree. Swirl the layers a bit using a stir stick. Top with fresh raspberries.
Variation: Add a dollop of whipped cream or vanilla ice cream for a peach melba inspiration.
Peach Passion Fruit Drink
In a blender, take the peach slices, peach jam, sparkling water and salt. Then blend until very smooth. Keep the consistency pourable but slightly thick. Adjust the sweetness with more jam. Fill an ice cube tray with ⅓ of the mixture and freeze for 2 hours. Refrigerate the peach drink.
Once the ice cubers are frozen, divide in tall chilled glasses. Pour the peach drink in the glasses.
Cut the passion fruit into halves. Scoop out the pulp from three halves and top it on the peach drink and give it a light stir. Cut wedges out of the remaining passion fruit and use for decoration.
Variation: Blend the passion fruit pulp with the other ingredients.
Peach Coconut Smoothie
In a blender, take peach slices, coconut milk, cream, lemon juice, maple syrup, vanilla extract, salt and 4 ice cubes. Blend until smooth and thick but pourable. Adjust consistency with coconut milk and sweetness with maple syrup.
Pour the peach coconut smoothie in chilled glasses up to ⅓ in volume. Add some crushed maple pecans and a drizzle of coconut milk. Repeat layers two more times. Top with roasted coconut flakes and serve with a wide smoothie straw.
Variation: Add a few chunks of pineapple with the peaches in the blender.
Notes
Passion fruit: Available at well stocked or upscale super markets such as Whole Foods, typically placed near tropical and exotic fruits. Or search online for the nearest grocery store selling these.
Coconut Milk: Use full fat coconut milk in can or chilled cartons.
Candied Maple Pecans: You can buy these readymade or make them as we did for our maple ice cream.
Make Ahead: Prepare the fruits and keep ready. Blend the mixtures and refrigerate a day ahead. Make the ice cubes, crushed ice and store in freezer.
Storage: The blended smoothies will keep well for 1 day in the refrigerator. However, the drinks once assembled in contrasting layers are best consumed immediately, or they may separate.
